If it's a herd animal, I expect competing plurals "prooses" and
"proose".

Digital Equipment's VAX computers were frequently pluralized as
"VAXen".

(I don't dispute the point that English irregular plurals are
essentially a closed class, but as usual, if you dig deep enough,
complications come to light.)
