how about the Southern version (at least as it sounds to me)?

In most of the US, and, crash, salmon, and Sam have the same phoneme.
In the Southern you're talking about, Simon is not the same phoneme as
that.

In NYC, and and salmon have the same vowel, crash and Sam have the
same other vowel.

Around here, they're known as the marry and Mary vowels respectively.
