Is there a simple explanation of why Hurrian having _santi_ for '7' would cause sapta- to become satta-? It's not immediately apparent to me.

We seem to lack the knowledge to challenge my sugestion that -pt- was just to un-Hurrian. And, Analyst41, note that these sound changes could have happened in the Hurrian language rather than the Aryan language from which they are borrowed. Retentions are informative; losses are much harder to interpret.
