You have Hodges book don't you? Look up Ramsey theory in the index. I think
Hodges himself has done much work relating to infinite model theory to
combinatorics.
Finite model thoery has a lot of conections with inite combinatorics, but I
know nothing about finite model theory, well almost nothing.
