The physical act of counting more or less amounts to establishing a
bijection between the collection of objects being counted and a
natural number.

There is no such thing as literally counting an infinite set. Indeed,
there must be finite collections so large that no human will ever
count their number.

But what all this has to do with the definition of natural numbers and
the simple theorem that |N| = |E| is beyond me. All this nonsense of
adding marks to an accumulator at a fixed rate and counting N at an
infinite rate is irrelevant and confused conceptual silliness. It
does nothing at all to clarify the proof that |N| = |E|.
