Choose a powder of proper dimensions, cast the sponge, wash out the
powder with a non-solvent for gelatin (hence the need to choose
wisely). There's your porosity.
Pressurize and mix fluid gelatin with a suitable volatile or gas, add
nucleating agent (e.g., finely divided something insoluble excipient).
Cast a pre-sponge then heat or depressurize to get your foam. Freons
are exceptionally good for this. NASA has demonstrated that safe and
effective Envir-whiner Freon-equivalents are both unworldly expensive
and catastrophic in application. It didn't stop NASA and it shouldn't
stop you.
Polystyrene foam except with gelatin.
Co-cast two immiscible (phase-separating) interpentrating gelatin
sponges and disentangle. Do you employ any topologists?
