If OP's instrument readings are accurate, a tool like TableCurve2D
might be useful to suggest a physically meaningful fitting function.
It tries dozens (hundreds now?) of different functions and ranks
them according to goodness of fit. The use can then flick through
the functions and see how well (in terms of other criteria such as
monotonicity) they fit. This shouldn't be a substitute for thought,
but could be a useful adjunct.
Then we disagree on this point. Mathematical models come by thinking
and experience tells us that such models are not suggested by a tool.
A fool with a tool is still a fool.
