Seems mupkern /? is the closest to documentation you'll find. Maybe

-m set modules path
-h set help path (plain text help pages)

-a set size of arithmetic stack
-L set limit of prime number table
-P p = suppress printing a prompt (default=P)
e = suppress echoing of input (default=e)
S = secure kernel mode (default=s)
w = suppress warnings (default=W)
-P srp= = set secure read path list
swp= = set secure write path list
sxp= = set secure exec path list
srp+ = add to secure read path list
swp+ = add to secure write path list
sxp+ = add to secure exec path list
-U set a user option string
-S startup silently
-V prints the MuPAD version and exits

-w install a watchdog

-t test coverage mode; statistical information goes in 'logfile'
-b execute in batch mode, option '-' suppresses any output


Quite a few of these, such as -S or -P p, are pointless in Windows.
