My favorite books about projective geometry are all by Coxeter:
_The Real Projective Plane_
_Projective Geometry_.
His _Non-Euclidean Geometry_ is also relevant.
About the relation of projective geometry to the Legendre transform and
convex analysis, I can give no positive suggestion.
