Courant and Robbins, What is Mathematics?
Davis and Hersh, The Mathematical Experience
Landau, Foundations of Analysis.

I read the last one during the summer between sophomore and junior years of college, and I personally found the rigorous development of numbers fascinating. I think "math-avid young people" should be able to understand at least most of it. After that, send them to Halmos, Naive Set Theory.
