This in the text I use this is taken for granted and never proved ...
What does this exactly mean ?

Without any context at all, it's hard to say exactly what it means:

It might simply mean that the change in a complex number is
the change in its real part plus i times the change in its imaginary
part.

It might mean that if you have a path given by z(t), then z-dot
is x-dot + i y-dot.

But since you haven't given the context in which this
is used, it's hard to say, and hard to know what is lacking
by way of a proof.
