oats, the only difference I can see is a serving of the steel cut has
.5grams of saturated fat. And btw, the 27 grams of carb is listed on
both.

Secondly, even though the amount of carbs is the same the physical form
of the material does matter. Imagine drinking 8 oz of water from a
glass or from a thin straw. What can you do faster? So even though the
amount of water is the same, the availability is not. With rolled oats
etc. the carbs are available very quickly so could spike sensitive types
like diabetics. Because whole oat groats or steel cut oats are larger
particles they have to be physically broken down to release all
available sugar and this is a slower process and thus a lower tendency
to spike.
