What to ask during consultation? How do you if a dentist is good beforehand?

I have consultations lined up with three prosthodontists. I spoke to two
orthodondists and they said they would need to split my pallet open and
widen it, wire my jaw shut, I'd have to eat through a straw for six months
and THEN I'd have to wear braces for three years. They didn't reccomend it,
I agreed. But my friend got his front teeth capped, I don't know if it was
caps or veneers (whats the difference?) and his teeth just look fake, also
for about six months when he smiled you could clearly see the top edge of
his teeth, they stuck out like a millimeter from his gum line, it took a
long time for his gums to grow over and cover that up. is that normal?
these are my teeth:

My bottom teeth are very crowded and crooked but i don't care about them
because no one ever sees them and i doubt if anything could really be done
with them anyways. I want to get my top front teeth fixed, cosmetically.
one of my front teeth is broken as you can see, the other has had three
cracks in it for over ten years. I'd like to have those redone, reshaped,
made smaller, and the two teeth on either side enlarged, I'd like my my
front teeth to all be even, have proper shapes/sizes, and all have the
same color. basically i want them to look normal.
Generally speaking, would this require caps? veneers? I'd like to have
an idea of what I probably need before I speak to the dentists, are there
any questions I should ask? How can you find out if a dentist is great?
(i don't want good, i want great, or preferably amazing), sure they can
show you before and afters but that doesn't mean there aren't less
successful before and afters that they're not showing me. Whats the best
way to judge a dentist? I want the best of the best, these are my only
teeth and its going to cost a fortune, might as well do it right.
let me know, thanks
ps. I'm in montreal, quebec if anyone has any reccomendations
