As someone who may have to have RCT soon, I've been looking around the
Web, and I've seen quite a lot of reports that say that, for some
people, there is a lot of pain afterwards.

How can this be so, if the nerve isn't there anymore?

There are plenty of vital nerves in the area of the tip of the root
after the root canal--in the periodontal ligament and bone.  Residual
inflammation from the infection, as well as over-exuberant
instrumentation, overfilling of the canal, introduction of irrigating
fluids into the space outside the root all can cause postoperative
sensitivity.  If the infection is gone, this sensitivity should clear up
in a few days to a week or two.
