Vitamin D is found in the following foods:
Dairy products
Cheese
Butter and margarine
Cream
milk
egg yolk
Fish
Oysters
Animal products constitute the bulk source of vitamin D that occurs
naturally in unfortified foods. Salt water fish such as herring,
salmon, sardines, and fish liver oils are good sources of vitamin D3.
Small quantities of vitamin D3 are also derived from eggs, veal, beef,
butter, and vegetable oils while plants, fruits, and nuts are
extremely poor sources of vitamin D.
Vitamin D is fat soluble. By restricting fats in the diet you will
restrict your ability to absorb Vitamin D. Reduced fat milk, butter
and cheese will rob you of Vitamin D and the ability to absorb it.
Vitamin D is a steroid hormone that has long been known for its
important role in regulating body levels of calcium and phosphorus,
and in mineralization of bone. More recently, it has become clear that
receptors for vitamin D are present in a wide variety of cells, and
that this hormone has biologic effects which extend far beyond control
of mineral metabolism.
Plant sources are poor sources. Animal sources are good sources.
Grains, unless "enriched", have zero vitamin D.
Another good reason to eat a low-refined-carb, high-fat diet.
