Institution in Belgium where you can learn how to degustate chocolat?

Hello,
I'm working in a chocolat factory and I have to set up a degustation
lab.
At first I want to learn too the people what they really taste.
So I would begin to give them different solutions like sugar, salty,
acid, etc.
Thats allready not that easy to find on the market, so if anybody can
help me with that, it's also very welcome!
Otherwise, I'm searching for an institution in Belgium or France where
they give courses for people who want to learn to recognize the
different flavours.
But I would also like to have some more information how to set up all
those things.
If anybody knows something where I can find more details or where I
can follow a course, any help is welcome.
