In my mind this is not a vegetarian question, the potential health
problems associated with it and in area nutritional quality are a seperate
subject. In all parts of india carbohydrate consumption makes up a major
part of the total calories. In meat eating areas they add small amounts
of meat and vegetable stews to large amounts of rice and/or beans of
various kinds and tubers and breads of various kinds. In non meat areas
they add more vegetable stews to the same high carb diet. Milk can be a
dietary item in any area and the milk derived fat ghee is used
extensively. The original basis for my remarks relates to carb intake and
the paradox question and those who claim it is high carbs at fault, which
is not supported by the evidence. In the past the rate of cvd and
diabetes was quite low and has climed to be prhaps the world's highest
without a substantual change in the amount of carb consumption.
