There is nothing wrong with "high" serum cholesterol, as long as it is
not high in oxidized cholesterol. Highly unsaturated fatty acids, on
the other hand, cause the damage to macrophages that lead to plaque
buildup, and thus "heart disease," but also are the root cause of most
Western "chronic diseases," especially considering the way the food is
processed and cooked. Search this group for montygram and read some of
my posts. Also, if you do a google web search for "ray peat" "carbon
dioxide" you will find several very good articles on what the
scientific reality actually is.
