There are several ways that whole grain bread will lower cholesterol
compared to white bread. Fiber reduces cholesterol absorption. There is
also
the effect of a somewhat lower glycemic response to whole grain bread,
though it's still pretty bad. (Particularly if you are a bit overweight,
the
effect on glucose and insulin from the starch in the flour can serve to
lead
to weight gain and higher cholesterol and triglycerides.)
It's surprising to me that switching from white to whole grain flour made
that much difference in your case. i would have expected it to make only a
modest difference. If you are overweight, there would be a greater
difference. If you eat a *lot* of bread, it would make a bigger
difference.
And, of course, i don't know what your cholesterol and triglyceride
readings
actually were.

I wasnt told I was overweight, but I have lost about 15 pounds with all this
wholegrain (getting ALL the available fiber really keeps you, um, regular).
I do eat alot of bread, not so much before I started baking it myself. Cant
recall my exact numbers, but the good number was always about where they
wanted it, and the bad was not quite terrible but not too good either.
