Vitamine formulations that give percent recommended deal only with minimum

There is no "optimum". Body weight, activity level, age, sex, stress
level, illnesses, are just a few variables. Another consideration is
the less you take in of a nutrient the more efficient your body is
utilizing that nutrient. So why sweat it? I say stop worry about
numbers/percents and just enjoy eating good quality food.

As for farming practices stripping all the nutrients from the soil,
yes, it could happen but:

Some vegies have 40% less of some nutritions than they did 40 years ago.

Sure, some might. But think about this. Never in the history of
man/womankind have we ever had such a variety, diversity, and
availability of food. (Not to mention we do less physical work than we
ever have.) And despite this recent cornucopia we still managed to
thrive.
