Are RAW grains ok?

Anyone have an idea what the glycemic index of RAW sesame seeds,
quinoa, millet, red and green lentils, whole oats, and cold soaked
barley, rye, and wheat berries might be?

Is there any downside to eating these grains uncooked?

Sincerely, BlackHawk
