But you cannot PROOVE you've accounted for everything, i.e., not paying someone
under the table. Even if you account for all your petty cash with receipts down
to the pack of gum, you can't proove you didn't do some work off the record and
get paid cash. You'd have to have enough extra unreported income to make you
live substantially above your means to make this obvious.
