In keeping the spirit of the law, we have redefined it.

And as you mentioned, we also have the freedom to define our worship and
observance of the law as we are individually led by the Holy Spirit.

The verse you posted about eating meat, and another which addresses what day
is proper for the Sabbath (any day) makes that fairly clear.

As you also mention, with that freedom comes a great deal of responsibility,
but we are not children anymore, even though many of us still act like that
sometimes.
