Even those who SAY that still do it - they just don't see it. Seen it a zillion times myself.
Pick and choose which part of Bible they will throw out and which they feel they should keep.

You're the first born-again Protestant type person I've ever come across who admits that. I've only ever been told that it applies to the whole Bible. Of course, that could be they say that for convenience's sake.
I do my best to not twist scriptures to fit my own personal ideologies or to place excessive weight on a few verses and build a gospel around them.
I've seen the results that all too frequently.
If read in a *global* manner and with a sincere and searching heart as opposed to a spirit of hostility, I have faith that it will yield its meaning and its treasures.
