Would you pick
strawberries in a field with no shade, no water available, no
bathroom
breaks, and for $3 an hour? I sure wouldn't. Now, change the
conditions. Make shade available, water available on demand, breaks
as
mandated by existing labor laws (including a half-hour off-the-clock
"lunch" break when scheduled for more than 6 hours), and a living
wage -
and here in SoCal that living wage had better be at least $10 per
hour,

...and if they were here legally, they would not have to resort to
such
crappy jobs - they would be protected under our federal laws regarding
employees/workers.

Not necessarily. Some employers won't pay prevailing wages no matter
what a person's legal status; quite a few servers in restaurants don't
have a base pay that's even minimum wage because their employer figures
in tips to make up the difference. That's why existing labor laws need
to be enforced.

Your post does lead me to wonder....how are you going to grow crops in
a
shaded, air conditioned area?

You're willfully missing my point and putting words into my mouth. If
you've ever seen these strawberry fields I'm talking about you know that
there isn't even a shaded area for workers to take breaks. That's what I
mean; have a shaded area where workers can take breaks out of the sun.
I never said anything about air conditioning; shade does not necessarily
mean cool, just out of the sun.
