After you insert all that butter and seasoning, try stuffing the cavity with
sliced oranges and other citrus fruit and more rosemary. It is absolutely
out of this world.

You just carefully start lifting the skin from one end with your fingers
until you can slide your hand under the skin completely. I loosened it
about halfway from one end and then finished from the other end.
You have to work carefully so that you don't tear the skin, but it's tough
enough that it can be done. Even if you tear it a bit, it will still be
OK.
Cream a stick of butter together with lots of rosemary and garlic and then
evenly stuff it in there.
I can't wait to make another for Christmas.
