I would have assumed that as it was
a) a form of carbon, and
b) a huge surface area open for reactions,
that it wouldn't be an ideal thing. and go whoosh! :-)

But then again, since you can cook ice-cream & meringue in the oven,
perhaps there's a protective phenomena that's not obvious?

Nope What you said. I would have to think it would behave rather
like coal dust, unless coated with a layer of something that would
resist oxidation...
