The knowledge that you are seeking comes from years of experience.
However, the best book(s) I've seen on the subject are the two by Mike
Kidger. Check out "Fundamental Optical Design" ISBN0-8194-3915-0 and
"Intermediate Optical Design" ISBN 081945217-3 both published by SPIE,
the latter one sadly compiled after his untimely death.
