Aren't they downside up?

Why are "spacetime" diagrams drawn downside up?
If we're falling through the void, shouldn't our paths point downwards.
It's much easier then to visualize our galaxy going down the plug hole.
By the way, why don't the stars go around the galaxy at the right speed?
