Let's say it is true that individual photons, when tunneling through a
quantum barrier, travel faster than light. I understand that not
everyone agrees with the experimental evidence but we can suppose it's
conclusive. If so, it would be very easy to modify special relativity
to be compatible with this assumption.

No it aren't. That is not to say SR may not need modification - but there
is no easy way to do it; because its very foundations forbid it.
