why are magnets only affect ferrous matter

They don't. Any magnetic field affects any charged particle.

But in practice, ferrous materials are affected much more strongly than
other materials, because of the specific way the charged particles in
iron (+ others) are arranged, compared to other materials.

what about a magnet able to attract hydrogen atoms
for instance, then all matter would be attracted, like
artificial gravity

It doesn't work that way.

Tom Roberts

It's true it doesn't work that way, but there is an effect of a magnetic
field to the magnetic dipole moment of protons an electrons, and of the atom
as a whole, right?
