*MUST* be a Lorentz invariant scalar.

Water would be a vapor or ice in other reference frames otherwise
IDIOT if Temperature did not remain invariant.

Temperature is not invariant. It transforms as

T' = T * (1 - v^2/c^2)^(1/2)

This does appear to raise an interesting puzzle. Suppose I have a
thermometer maintained at the triple-point of water. Presumably a passing
observer would agree that it reads 273.16 K (if necesary it has a digital
radout) and that I do have water vapour, ice and liquid water all
coexisting. How would she interpret T'?
