only changes if the amount of matter changes. It is also a scalar,
which means it can not change unless the amount of matter changes.

Novice here,

I thought matter and energy were discovered to be interchangeable with
matter just being a complex and compact arrangement of energy. Why is
it unreasonable then that as energy is put into matter, a portion of
it might becomes matter/mass?
