1. If two entangled particles were to be joined together somehow, what
would the likelyness of their rejoining be?

Nothing particular.

2. Is it possible to coerce entangled particles to do what we want them
to do without disrupting their entanglement? I know measuring them
would un-entangle them, but what if we don't measure them?

Anything else than a measurement won't project the state onto an unentangled
state, the entanglement will then always remain.

Measurement: h1x-h1 + h2x-h2 -> h2x-h2, unentangled.
Otherwise: Uh1x-Vh1 + Uh2x-Vh2 -> (UxV)(h1x-h1 + h2x-h2), unchanged.
