It is called flying in thermals.

Consult any book on how to fly a glider written in the last 70 years.

BTW in aviation speak turbulance means abrupt changes in air flow without
regard to direction and thermals are rising air though you can get
rising air without thermals, such as on the upwind side of a mountain.

Have you consulted your national aviation authority to see is what you
propose is legal to do?

How about the radio authority for the control and monitoring radios?
