So, what if we were able to actually see thigns at this scale?

Gets problematic here. What wavelengths would you expect to need to
see by, IOW what sort of resolution would be needed? What sorts of
biological mechanism could do this?

Yep.

How did we evolve to see things as we do now, and not on the atomic
level ?

Because things happening on that level don't matter much except in
the aggregate. IOW we evolved to see _important_ things which happen
at larger-than-atomic scales because that's where we live.

Could a creature exist that sees things on the atomic level, if not,
why ?

It would have to be living at a scale that atomic-scale events
mattered to it. What sort of creature would that be?
