You get the same experiance returning to land after a long sea voyage. You
can smell it as you get close. If they brought some sod along, then they
would miss the "good" experiance of looking forward to the smells of
nature. It's only after having been without something, that you realize
how much it really means.
There are many reason to have a "Garden" module on the space station.
