If memory serves, the name is now taken to refer to the distilling
process as much as the country of origin (though these are somewhat
linked) - and the twice-distilled process does occasionally crop up in
Canada or Japan (or, god help us, Wales). I even encountered Breton
whisky once, though I confess I didn't read the label closely enough to
check the spelling :-)

Yes, here foreign stuff is spelt as per country of origin, and vice
versa - an Irish retailer of whisky won't change the spelling on the
bottle. That said, there are still many who'll insist that all this
foreign muck gets an e, and it's not an entirely unpopular opinion...
