They say this footage is off a Saturn V launch, but IIRC this is from a Saturn 1B, as it has three seperation motors on it.
Saturn V S-IVBs only had two.
I think that segment was also used in the opening to 'Buck Rogers" (1970's).
I'm pretty sure that piece of footage was the direct inspiration for both the forest dome jettisoning scenes in "Silent Running":
