Comrade! Hero aerodynamic stabilization fins!
What they are is a box-like structure divided into many rectangular compartments with the individual rectangles being separated by vertical walls in a diamond arrangement, sort of like the flow stabilizer grid one finds on the front of a electric house fan.
It's a clever design, as although the overall size of the grid box is small, when you tally up all the surface area of the vanes that make it up, it equals a good-sized fin.
They also are used on the four swing-out stabilizers on the Soyuz/ Zond escape system: http://www.xpda.com/junkmail/junk162/GPN-2002-000178.jpg

Here's a shot of them in a folded position on the N1: http://www.aerospaceweb.org/question/spacecraft/russia/n1-1.jpg
While I was looking for that, I came across a big knockout piece of artwork of the Soviet LOK lunar orbiter spacecraft, which would serve the same function as the Apollo CSM: http://www.buran.ru/images/jpg/lok-1.jpg
