How hard could it be to insert an additional segment in an SRB? Is there
any reason to change the propellant configuration from the one used for the
shuttle?

If the thrust profile of the existing SRM is adequate for the stick
configuration -- in particular, if we don't care whether the thrust is
reduced for a few seconds at around the 70 second mark -- don't mess with
the configuration.
