I thought I saw a show on cable a few years ago about a couple who did
something along those lines with an Albatross (Grumman rather than
other)

I saw it too. They planned to fly around the world in their customized Albatross. It seems a shame to radically modify such a rare aircraft just for personal pleasure. I guess it could be justified as preservation. I'd rather see it done to a DC-3/C-47 and I still wouldn't be pleased with that.
