trimmed mean

hi everybody,
As my data is very big, I want to work with trimmed mean. My question is :
can I delete 15 % of my data (the biggest and the smallest values of my
dependent variable) ? I ask this question because I don't know if, in
statistics, we must delete 10 % or 20 % only ?
