I think that StatXact (www.cytel.com) has an extension of the Fisher exact test for tables larger than 2x2. You can download a 30-day trial version to check it out.
After reading Rich's response, I see that I responded without reading the original post very carefully. Obviously, Fisher's exact test (and extensions thereof) are for contingency tables, not for goodness of fit.
