Hi Dennis,
why don't you ask zeiss directly? They have always been kind when I
addressed questions to them about old objectives etc... so why not try
out?
From old prospects it seems to be not enamel but paint.
With the nikons I can`t help..

Pierre-Francois, I'd be tempted to take the unit apart, set up a
separate work space, get a small electric tool like a power drill or
grinder with something like a grinding brush and just remove the
paint. Then go to your local hardware store and buy an very good
quality metal paint for a few dollars, and fewer Euros. Paint and let
dry. Now you have your own stereo! Take the Nikon name off and make
up a product plate with your name on it, the Pierre-O-Scope for
instance.

The usual paint used on microscopes is an epoxy based paint. Its not
listed in any parts list since its so rarely used. Of course you
can't repaint a scratched up stage or anything similar but a stand,
you might want to think about it.
