What kind of output does the camera have? Is it digital or analog,
and how small do you want to go? Do you need just a live video
display, or do you need to capture images from the camera?

For simple video display from an analog camera that has a standard RCA
jack, there small displays are available. I don't know if the small
size and resolution would do justice for video microscopy (especially
if pathology and diagnostics is involved), but it might be worth
taking a look at:

Maybe the 7 inch monitor would be suitable?

I use an Archos 605 WiFi that has a hi res screen and a travel dock to
connect to my camera, but generally the analogue output of a digital camera
is low res, Making it only just usable
